If, like me, you’ve left it out of recipes entirely because you weren’t exactly sure what its function was, read on. Cornstarch is a magic ingredient used to thicken stews, soups, sauces, and gravies. Derived from the endosperm of corn kernels, it takes the form of a white, flavorless powder. In order to include cornstarch in your cooking, you first have to make a simple slurry of cornstarch and water. Mix, mix, mix. Add it to your dish, and voilà, notice how it completely transforms your food.

How to make ahead and store

To store your ground beef stir-fry, transfer it to an airtight container and store it in the fridge for 3-4 days. To store in the freezer, transfer to a freezer-safe container and store for up to 4 months.

Ingredients

  • 1 lb lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion sliced
  • 1 red bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 carrots sliced
  • 3 cloves garlic minced
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it into small pieces as it cooks.

  • Add onion, bell pepper, broccoli, snap peas, carrots, and garlic to the skillet. Cook for about 5 minutes, stirring occasionally, until vegetables are tender.

  • In a small bowl, whisk together soy sauce, cornstarch, water, and sesame oil. Pour over the beef and vegetables in the skillet. Cook for another 5 minutes, stirring frequently, until the sauce has thickened. Season with salt and pepper to taste.
