Welcome to week 5Â of the healthy dinner plan!
You guys, It is SO FLIPPIN’ HOT OUT. TOTALLY not used to this heat – Seattle was NOT like this.
This heats means I want to limit the time with the oven on to a VERY minimum – and I think you feel the same way! That’s why, this week, we’re doing a LOT of grilling and a little slow cookin’! Trying to keep you from melting!
Monday’s strawberry balsamic cashew zoodles is one of my FAVORITE summer meals! It’s completely NO COOK and it’s super light, healthy and totally refreshing with those pops of juicy strawberries! Mr. FFF and I also LOVE the shrimp nacho bowls with grilled avocado. You remember yesterdays plant power bowl where we talked about grilled avocado right? It’s SO good and makes avocado even MORE addicting!
If you remember weeks 1, weeks 2, weeks 3 and weeks 4, I also had the option to snag a printable shopping list, complete with all the recipes and nutritional information! However, I have to push pause on that, and actually this whole series. With developing 3+ recipes a week, photographing, editing, writing posts and trying to make friends in a new town, I think I bit a little more off than I can chew 🙂 So, today, I still have a PDF for you to print out with the ingredients you need for each recipe, and the ingredient lists are still catered to feeding a family of 4 (factoring in enough for leftovers on Thursday too!) Just print out all the recipes below and you’re good to go!
However, this will be the LAST weekly meal plan! I hope you enjoyed the 5 weeks!

Monday – Strawberry Zucchini Noodles with Balsamic Cashew Cream (Vegan + Paleo)
Tuesday – Honey Lime Grilled Avocado Shrimp Nacho Bowls (Gluten Free + Dairy Free)
Wed – Slow Cooker Italian Chicken with Zucchini Noodles (Gluten Free + Low Carb + Dairy Free)
Thursday – Leftovers from Wednesday (so make a double batch!)
Friday – Firecracker Pineapple Chicken (Paleo + Gluten/Grain/Dairy Free + Whole30)
Sat – Date night
Sunday – Cajun Burgers with Sweet Potato Buns (Gluten/Dairy/Grain Free + Paleo)
If you’re looking at the firecracker chicken, and not diggin’ the spice, might I suggest this paleo orange chicken? It’s much better than takeout – I promise!
The cool, creamy avocado in this sweet potato salad with avocado pesto would play really well with all the spices in the Cajun Burgers! And, double the sweet potato goodness too!
