To make them just a little more wholesome, you can use whole-wheat flour instead of regular flour and use half the amount of sugar. It should be noted that using a good-quality, unsweetened cocoa powder will provide some antioxidants. To make these pancakes gluten-free, use almond flour instead of all-purpose flour. Erythritol, stevia, or monk fruit sweetener are good sugar replacements for these waffles. Erythritol and monk fruit sweetener can be used at a 1:1 ratio, whereas stevia should be reduced in quantity.

If you have leftovers, let them cool, then store them in an airtight container in the fridge for up to 1 week. You can also freeze them by individually wrapping them in plastic and then in aluminum. Or, you can first flash-freeze them by laying them out on a baking sheet and putting them in the freezer for about 30 minutes. Once they are hard, you can put them all in an airtight container. They should last for 3 months.
