This copycat recipe for Chipotle’s signature corn salsa will convince you never to order delivery again!

I love Chipotle. As far as fast food goes, it’s definitely a healthier choice. Plus, the menu options are simple, customizable, and full of flavor. But eating out, even somewhere as great as Chipotle, costs you money and calories. So, I’ve been working on finding healthier alternatives to some of my restaurant favorites. Today, I’m sharing with you a copycat recipe for the famous Chipotle corn salsa.
I used to be an extremely picky eater, but over the past few years, I’ve pushed myself to branch out beyond just “meat and cheese” meals. The Chipotle corn salsa was one of the first toppings I was willing to try adding to my Chipotle order, and since then, I’ve become totally obsessed with it! It’s sweet and aromatic and adds just a pinch of heat to your dish. Personally, I love the crunch the most.
This version of the iconic Chipotle corn salsa is healthier, easy to make, and, dare I say it, tastier. Plus, you don’t have to deal with the lunch rush line.
Is This Chipotle Corn Salsa Healthy?
As long as we’re comparing recipes, my version is actually healthier than Chipotle’s! This Chipotle corn salsa is only 54 calories per serving and relies almost entirely on fresh veggies and juices to create its delicious flavor. In contrast, Chipotle’s original recipe weighs in at 80 calories.

Boom, Roasted
This recipe is delicious as is. But if you want to take it to the next level and are willing to put in some extra time, try roasting your corn before mixing it with your other ingredients.
Chipotle’s version is a roasted chili corn salsa, and the lightly charred corn kernels add a smoky, aromatic taste that makes the salsa truly irresistible. Just toss your corn in olive oil and/or butter, spread it in a thin layer on a baking sheet, and roast to your desired browning. You could also opt to roast your jalapeños for a deeper heat. After the corn cools, you can go about the recipe as recommended!

How Do I Store Leftovers?
You can store your corn salsa in an airtight container in the fridge for 3-4 days and add it to any dishes you see fit.

Serving Suggestions
