This dish might have been inspired by football season, but for me, it’s a crowd-pleaser any time.

Buffalo sauce is said to have originated at a family-owned restaurant in Buffalo, New York, in 1964. And ever since, it’s been a cornerstone of spicy comfort food. If you’ve never thought of Buffalo flavors as a breakfast option, think again. Sweet potatoes balance the heat of this dish with their natural sweetness, while red peppers and onions add a layer of depth and crunch. Top it off with a drizzle of Buffalo sauce, and this one-pan wonder is perfect for any time of day—not just game day.

What makes Buffalo sauce so irresistible? It’s all about balance—the tangy, buttery smoothness and fiery heat combine to create a flavor profile that wakes up your taste buds. If you’re worried about the spice level, remember that you control how much sauce to drizzle on top; for milder heat, try mixing it with olive oil, and for a creamier topping, simply add some yogurt. Beyond chicken, Buffalo sauce can be used as a zesty dip for veggies, a bold addition to pizza, or a spicy kick for scrambled eggs and roasted potatoes. You can even stir it into mac and cheese or use it to flavor popcorn!

How To Make Ahead And Store

If you need to, you can make the hash without the eggs ahead of time. Store it in an airtight container in the fridge for up to 3 days. When ready to eat, reheat the hash on the stovetop in an ovenproof skillet and add the fresh eggs before baking. This hash also freezes well (without the eggs) for up to 2 months. Ingredients

  • 1 cup sweet potato cubed (125g)
  • 1 tablespoon olive oil
  • 1/2 small onion chopped
  • 2/3 cup red pepper thinly sliced
  • 2 teaspoons garlic minced
  • 2 links chicken sausage sliced
  • Salt and pepper pinch of each
  • 1/2 cup reduced-fat shredded cheddar cheese (omit for Paleo/Whole30)
  • 2 eggs

For topping:

  • Buffalo sauce drizzle
  • 1 green onion chopped

Instructions

  • Heat your oven to 400°F.
  • Bring a medium pot of water to a boil and cook the cubed potatoes until they are just fork-tender, about 3-4 minutes. Drain and set aside.
  • In a large ovenproof pan, heat the olive oil on medium heat. Cook the potatoes, onion, and red pepper until lightly golden and soft, about 4-5 minutes.
  • Add the garlic, chicken sausage, salt, and pepper. Cook, stirring often, until the sausage is lightly browned. Let sit for 5 minutes to caramelize the bottom.
  • Sprinkle the grated cheese onto the potato mixture, and stir to mix the hash.
  • Make two wells in the hash and crack the eggs into them gently. Cover and place into the oven until the eggs are cooked to your liking. I like my yolks runny, which took about 4-5 minutes.
  • Drizzle with Buffalo sauce and chopped green onion, and serve hot.
