This baked donut recipe is gluten free, quick and so easy! They taste like an Almond Joy Bar, in a donut form! Basically, you need these donuts in your life.

I have been waiting to share these this baked donut recipe with you for MY WHOLE LIFE.
Or, since I made them a couple months ago.
So, basically, my whole life. You get it.
Moving on.
These donuts are kind of like the Freezer Pops we just talked about…I have been avoiding making them due to lack-age of a donut pan.

Then one day, I was doing really important computer things (read: shopping on Ebay..<3) and I saw a donut pan come up in one of those “people who viewed this also viewed…” things.

So rude.
Obvi, I viewed it.
Obvi, the sequel, I bought it.
I was even more excited when the donut pan showed up on my doorstep THE NEXT DAY. Of course, I threw all other recipe testing related plans out the window, and made a baked donut recipe instead.

It was a very happy day in the FFF lentil-sized kitchen.
It was also a VERY happy belly day.
I based the donuts slightly off these gluten free muffins, and you may recognize the (AH-MAY-ZING) chocolate ganache from the (most adorbs ever) gluten free pancake skewers.
Then I added more almond and more coconut…because it’s yum.

And, because I can.
Of course, I am not going to lie to you and say that you will never ever want to eat an Old Fashioned Sour Cream Donut (I love these SO much that Mr. FFF and I broke one together on our wedding day, instead of cutting cake)
Because, let’s be honest, something fried will always taste better than something baked.
HOW-EV-ER, this baked donut recipe is super moist, light and are ALMOST as good as their oily, fried (delicious) counter parts.

PLUS, they’re gluten free.
And, they taste like an almond joy. In donut form.
Sidenote: Do I make too many Almond Joy inspired desserts for you? There was the chocolate truffle recipe, the quinoa coconut chocolate gluten free cookies and the “Cheesecake”
Can’t.Stop.Chocolate.Coconut.GAH.

I have made baked donuts before with almond flour. I like the texture it has. I have made some things with coconut flour some good some not so good. I have never seen this much coconut flour used with only 2 eggs. I would think it would be at least 4. They look so good.

Coconut flour is definitely tricky to bake with! Yes, if there was more coconut flour, you would need more eggs, but not with the 2 kinds of flours.
