Zucchini Pancakes

Ingredients

  • 2 cups grated zucchini excess water squeezed out
  • 2 large eggs
  • ½ cup all-purpose flour
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  • Combine grated zucchini, eggs, flour, Parmesan cheese, baking powder, salt, and pepper in a large bowl. Mix until well combined.
