Vegetarian Omelette

Ingredients

  • 2 tablespoons diced tomatoes
  • 1/4 red bell pepper diced
  • 1/2 cup fresh spinach chopped
  • 1/4 teaspoon olive oil
  • 2 large eggs
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup shredded mozzarella cheese

Instructions

  • Heat the olive oil in a nonstick skillet over medium heat.

  • Whisk the eggs in a bowl, season with salt and pepper, and pour into the skillet, cooking until the edges start to set.
