Vegan Tzatziki Recipe

Ingredients

  • 1 medium English cucumber
  • 1 1/2 cups unsweetened plant-based yogurt
  • 2 cloves garlic minced
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions

  • Grate the cucumber and use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible.
  • In a mixing bowl, combine the drained cucumber, plant-based yogurt, minced garlic, chopped dill, lemon juice, salt, and pepper.
