Ingredients
- 1 tablespoon olive oil
- 1/2 cup onion diced
- 2 teaspoons garlic minced
- 12 ounces dairy-free cream cheese softened to room temperature
- 1/2 cup dairy-free sour cream
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 24 ounces frozen spinach thawed
Instructions
- In a large frying pan, heat the oil. Cook the onion and garlic until golden brown and the onions are soft, about 5 mins.

- Transfer to a large bowl and mix in the cream cheese, sour cream, paprika and salt.

- Wring the water out of the spinach as much as you can (I like to do this in a thin kitchen towel.)

- Mix the spinach into the rest of the ingredients.

- Serve!
