Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onion diced
  • 2 teaspoons garlic minced
  • 12 ounces dairy-free cream cheese softened to room temperature
  • 1/2 cup dairy-free sour cream
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 24 ounces frozen spinach thawed

Instructions

  • In a large frying pan, heat the oil. Cook the onion and garlic until golden brown and the onions are soft, about 5 mins.

  • Transfer to a large bowl and mix in the cream cheese, sour cream, paprika and salt.

  • Mix the spinach into the rest of the ingredients.
