Vegan Empanadas

Ingredients

For The Dough:

  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup vegetable oil
  • 1/2 cup cold water

For The Filling:

  • 1 large onion diced
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 cup black beans cooked and drained
  • 1/2 cup corn cooked
  • 1/4 cup fresh cilantro chopped

Instructions

Make the Dough:

  • In a large bowl, combine flour and salt.

  • Gradually mix in vegetable oil and cold water to form a smooth dough.

  • Cover the dough and let it rest in the fridge for 30 minutes.

Make The Filling:

  • In a skillet, sauté the onion, bell pepper, and garlic until soft.

  • Stir in the cumin, paprika, black pepper, black beans, and corn. Cook for another 5 minutes.

  • Remove from heat and stir in chopped cilantro.

Assemble And Bake The Empanadas:

  • Preheat oven to 375°F.
  • Roll out the dough. Cut into 4-inch circles. Place a tablespoon or two of filling on one half of each circle. Fold the other half of the circle over the filling and seal.

  • Bake until golden, about for 25 minutes.
  • Remove from oven and let cool slightly. Serve warm.
