Ingredients
- 2 cups graham cracker crumbs
- 1 1/2 tablespoons granulated sugar
- 1/2 cup unsalted butter melted
- 16 ounces fresh strawberries thinly sliced (reserve some for garnish)
- 2 8-ounce packages cream cheese softened
- 1 cup powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 3 cups whipped topping thawed
- 2 1/2 tablespoons strawberry Jell-O mix
Instructions
- Line an 8x8-inch pan with parchment paper. In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of the pan and chill for 15 minutes.

- Arrange about half of the sliced strawberries evenly over the chilled crust.

- In a bowl, beat the cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth. Gently fold in 2 cups of the whipped topping until combined well.

- Split the cheesecake mixture into two equal parts. Mix the powdered strawberry Jell-O into one half and stir until well combined.

- Spread the plain cream cheese mixture over the layer of strawberries. Add another layer of strawberries (reserving some for garnish) and top with the strawberry cream cheese mixture. Carefully top with the remaining whipped topping.

- Chill the assembled dessert in the refrigerator for at least 1 hour to set. Garnish with the reserved strawberries before serving, if desired.
