Ingredients

  • 2 pounds russet potatoes
  • 2 tablespoons high-heat cooking fat such as tallow, ghee, olive oil, or avocado oil

Instructions

  • Preheat the oven to 425°F.
  • Combine garlic powder, thyme, oregano, salt, and pepper in a small bowl.

  • Cut each potato into 16 wedges.
