Smoked Meatloaf

Ingredients

  • 2 pounds ground beef
  • 1 pound ground pork
  • 1 cup onion finely diced
  • 2 cloves garlic minced
  • 2 large eggs beaten
  • 3/4 cup bread crumbs
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1/2 cup BBQ sauce
  • 1 tablespoon apple cider vinegar

Instructions

  • Preheat your smoker to 250°F.
  • In a large bowl, combine ground beef, ground pork, diced onion, minced garlic, beaten eggs, bread crumbs, milk, Worcestershire sauce, paprika, salt, and black pepper. Mix until just combined.

  • Shape the meat mixture into a loaf and place it on a wire rack.

  • In a small bowl, mix together BBQ sauce and apple cider vinegar. Brush the meatloaf with the sauce.
  • Place the meatloaf in the smoker and cook for 3-4 hours, or until the internal temperature reaches 165°F. Brush with additional BBQ sauce every 30-40 minutes.

  • Remove the meatloaf from the smoker and let it rest for 10-15 minutes before slicing and serving.
