Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound large shrimp peeled and deveined
  • 1 large bell pepper cut into 1-inch pieces
  • 1 medium zucchini cut into 1-inch slices
  • 1 medium red onion cut into 1-inch pieces

Instructions

  • In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper to create the marinade.
