Ingredients

  • 1 pound raw shrimp peeled and deveined
  • 1 large egg
  • 1 1/4 cups breadcrumbs
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 4 whole wheat burger buns
  • Lettuce leaves
  • Tomato slices
  • Red onion slices

Instructions

  • Chop half of the shrimp coarsely and pulse the other half in a food processor until a paste forms.
  • In a bowl, combine the chopped shrimp and shrimp paste. Add the egg, breadcrumbs, minced garlic, chopped parsley, lemon juice, Old Bay seasoning, salt, and black pepper. Mix until well combined. If needed, add up to 1/4 cup more breadcrumbs to bring the mixture together.

  • Divide the mixture into 4 equal portions and shape them into patties.

  • Refrigerate the patties for 15 minutes to help them firm up.
  • Heat olive oil in a large skillet over medium heat.
  • Cook the shrimp patties for 3–5 minutes on each side, or until golden brown and cooked through.

  • In a small bowl, mix mayonnaise and lemon juice to make a sauce.
  • Toast the burger buns if desired.
  • Spread the lemon mayonnaise on the buns. Add lettuce leaves, a shrimp patty, tomato slices, and red onion slices. Top with the other half of the bun and serve.
