Ingredients
- 1/2 cup plain Greek yogurt
- 1 can cream of chicken soup 10.5 ounces
- 1 cup shredded cheddar cheese divided
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- Kosher salt to taste
- 1/4 teaspoon black pepper
- 3 cups shredded rotisserie chicken
- 2 1/2 cups cooked rice
- 1 cup chopped broccoli florets
- 1/2 cup crushed whole wheat crackers
- 2 tablespoons melted butter
- Freshly chopped parsley for garnish
Instructions
- Preheat the oven to 350°F. Lightly grease a 9x13-inch baking dish.
- In a large bowl, combine Greek yogurt, soup, half of the cheddar cheese, onion, garlic powder, salt, and pepper. Mix until incorporated.

- Stir in the shredded chicken, rice, and broccoli until evenly mixed.

- Transfer the mixture to the prepared baking dish and spread evenly.

- Sprinkle the remaining cheddar cheese on top, followed by crushed crackers. Drizzle with melted butter.

- Bake for 30 minutes or until bubbling and golden on top. Sprinkle with fresh parsley for garnish.
