- ½ medium head purple cabbage thinly sliced
- 2 medium carrots shredded
- 2 tablespoons apple cider vinegar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey

Instructions
- In a large bowl, combine the thinly sliced purple cabbage and shredded carrots.

- In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, and honey until well blended.
