- 1/4 cup pomegranate juice
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- In a jar with a tight-fitting lid, combine the pomegranate juice, olive oil, red wine vinegar, honey, Dijon mustard, salt, and pepper.

- Secure the lid and shake the jar vigorously until all the ingredients are well blended and the vinaigrette is smooth.

- Store the vinaigrette in the refrigerator in the sealed jar for up to 5 days; shake well before use.
