Roasted Padrón peppers served with a side of sea salt.

Ingredients

  • 1 to 2 tablespoons olive oil
  • 4 cups Padrón peppers
  • Smoked paprika optional
  • 1 teaspoon flaked sea salt
  • Juice of 1 lemon

Instructions

  • Add olive oil to a large frying pan on high heat.

  • Once the oil is hot, add the Padrón peppers to the pan. Sprinkle with smoked paprika if using.

  • Cook for about 5 minutes, turning regularly to cook them on all sides.

  • Once the peppers are browned and blistered, transfer them to a serving plate and sprinkle with flaked sea salt. Squeeze fresh lemon juice over peppers when serving.
