Ingredients
- 4 large egg whites at room temperature
- 1/2 teaspoon cream of tartar
- 1 cup granulated sugar
- 1 teaspoon pure vanilla extract
Instructions
- Preheat the oven to 200°F and line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, beat the egg whites until foamy. Add the cream of tartar and continue to beat until soft peaks form.

- Gradually add the sugar, 1 tablespoon at a time, while continuing to beat the mixture. Once all the sugar is added, beat until stiff peaks form and the meringue is glossy.
- Beat in the vanilla extract until just combined.

- Transfer the meringue to a piping bag fitted with a star tip. Pipe the meringue into small circles on the prepared baking sheet, building up the edges to form nests.

- Bake in the preheated oven for 2 hours, or until the meringues are crisp and dry. Turn off the oven and let the meringues cool completely inside, with the door slightly ajar.
- Once cooled, fill the meringue nests with your choice of filling before serving.
