Ingredients

  • 1 English cucumber halved and sliced
  • 3 large Roma tomatoes chopped
  • 1/2 onion thinly sliced
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh basil chopped
  • 3/4 cup kalamata olives halved
  • 4 1/2 ounces feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 1/2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt plus more to taste
  • Freshly ground black pepper to taste

Instructions

  • In a large salad bowl, mix the cucumbers, tomatoes, onion, parsley, basil, and olives.
