Ingredients
- 1 English cucumber halved and sliced
- 3 large Roma tomatoes chopped
- 1/2 onion thinly sliced
- 2 tablespoons fresh parsley chopped
- 2 tablespoons fresh basil chopped
- 3/4 cup kalamata olives halved
- 4 1/2 ounces feta cheese crumbled
- 3 tablespoons olive oil
- 2 1/2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt plus more to taste
- Freshly ground black pepper to taste
Instructions
- In a large salad bowl, mix the cucumbers, tomatoes, onion, parsley, basil, and olives.

- Add the feta cheese, olive oil, red wine vinegar, oregano, salt, and pepper. Toss everything together to combine and serve immediately.
