Mashed Sweet Potatoes

Ingredients

  • 3 pounds sweet potatoes
  • 1/4 cup unsalted butter or ghee melted
  • 1/4 cup milk or dairy-free alternative
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • Finely chopped parsley for garnish, optional

Instructions

  • Peel the sweet potatoes and cut them into 1-inch to 1 1/2-inch chunks.

  • Boil the sweet potato chunks in a large pot of water until fork-tender, about 20 to 30 minutes, then drain.
