Ingredients
- 1 lb baby spinach
- 2 tablespoons butter
- 2/3 cup onion diced
- 3 teaspoons garlic minced
- 4 oz full-fat cream cheese
- 1/2 cup unsweetened almond milk
- 1/2 teaspoon nutmeg
- 1/2 teaspoon sea salt
Instructions
- Bring a very large pot of water to a boil, and when it's boiling, add in the baby spinach. Cook the spinach for 1 or 2 minutes, or until it turns a bright green color and has started to wilt, then drain the pot and transfer the spinach to a colander.

- In the same pot, lower the heat to medium and begin to melt the butter. Add in the onion and garlic and cook until slightly golden brown, about 3 minutes.

- Add in the cream cheese, almond milk, nutmeg, and salt, and whisk until the mixture is smooth and melted. Continue to cook, stirring frequently, until the sauce has lightly thickened, about 2 to 3 minutes.

- Squeeze out as much water from the spinach as possible and then stir it into the pan until well coated in the sauce. Taste and adjust seasonings as needed.
