- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter melted
- 1 14-ounce can sweetened condensed milk
- 1/2 cup key lime juice
- 1/2 teaspoon vanilla extract
- 4 ounces cream cheese softened
- 4 large egg yolks
- Pinch of kosher salt
- 1 tablespoon lime zest
- Whipped cream for garnish (optional)
Instructions
- Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl.

- Press the mixture into a parchment-lined 8-inch square baking pan and bake at 350°F for 8-10 minutes.

- Whisk together sweetened condensed milk, key lime juice, vanilla extract, cream cheese, egg yolks, salt, and lime zest until smooth.

- Pour the filling over the baked crust and return to oven. Bake for 15-20 minutes at 350°F until the bars are mostly set with the center just barely jiggly.

- Allow the bars to cool at room temperature, then refrigerate for at least 3 hours before cutting into squares.

- Decorate the bars with whipped cream if desired.
