Ingredients
- 1/2 cup peanut butter
- 2 tablespoons butter
- 4 tablespoons powdered Swerve sweetener
- 1/2 teaspoon vanilla
- Pinch of salt
- 1 1/4 cups unsweetened coconut flakes
Instructions
- In a large pot melt the peanut butter and butter over medium heat.

- Once melted, remove from heat and whisk in the Swerve. Once mixed, whisk in the vanilla and a pinch of salt.

- Stir in the coconut flakes.

- Drop onto a parchment paper-lined baking sheet and press out about 1/3 inch thick.

- Refrigerate until firm, about 1 hour.

- Remove from the cookie sheet and store in the fridge.
