Ingredients

  • 1/2 cup peanut butter
  • 2 tablespoons butter
  • 4 tablespoons powdered Swerve sweetener
  • 1/2 teaspoon vanilla
  • Pinch of salt
  • 1 1/4 cups unsweetened coconut flakes

Instructions

  • In a large pot melt the peanut butter and butter over medium heat.
  • Once melted, remove from heat and whisk in the Swerve. Once mixed, whisk in the vanilla and a pinch of salt.
  • Stir in the coconut flakes.
  • Drop onto a parchment paper-lined baking sheet and press out about 1/3 inch thick.
  • Refrigerate until firm, about 1 hour.
  • Remove from the cookie sheet and store in the fridge.
