Ingredients

  • 1 1/2 pounds chicken breasts
  • Salt and pepper, to taste
  • 4 slices bacon, chopped
  • 1 1/2 tablespoons butter
  • 4 ounces cream cheese, softened
  • 6 ounces shredded cheese, cheddar or mozzarella, your choice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 400°F. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness. Season both sides with salt and pepper.

  • In a heavy skillet over medium-high heat, add the chopped bacon and cook until crispy. Remove the bacon and reserve about a tablespoon of the bacon fat. Add butter to the skillet and sear the chicken breasts for 3-4 minutes per side until lightly browned.

  • Transfer the seared chicken to a greased 9x9-inch casserole dish. In a small bowl, mix the softened cream cheese, shredded cheese, garlic powder, onion powder, Italian seasoning, and a pinch of extra salt and pepper.

  • Spread this mixture evenly over the chicken and sprinkle the reserved bacon on top. Bake for 20-35 minutes or until the chicken is cooked through and the cheese has melted. Cooking time will vary depending on the thickness of the chicken.
