For the French Toast Bake:
- 2 large eggs
- 1/2 cup egg whites (roughly 4 large eggs)
- 1/4 cup unsweetened vanilla almond milk
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ginger powder
- 5 slices whole-wheat bread
- 1 small peach (about 1 cup) diced
- 1 tablespoon honey
For the Topping:
- 2 tablespoons oat flour or blend 2 tablespoons oatmeal in a food processor
- 2 tablespoons rolled oats
- 2 tablespoons brown sugar
- 6 tablespoons almonds sliced
- 1/8 teaspoon ground cinnamon
- 2 tablespoons coconut oil melted
- Honey for topping
Instructions
Prep the French Toast Base:
- In a large mixing bowl, whisk together the eggs, egg whites, almond milk, vanilla extract, granulated sugar, cinnamon, and ginger until well combined.
- Remove the crusts from the bread slices, then tear the bread into small cubes.
- Add the bread cubes to the egg mixture, stirring to coat. Cover the bowl and refrigerate for at least 4 hours or overnight for best results.
Prepare to Bake:
- Preheat your oven to 350℉. Lightly grease two oval brûlée dishes (or similar-sized baking dishes) with cooking spray.
- In a small bowl, combine the diced peach and honey, tossing until the peach pieces are evenly coated.
- Stir the peach mixture into the soaked bread, ensuring even distribution. Divide the mixture evenly between the prepared dishes.
Make the Streusel Topping:
- In a medium bowl, combine the oat flour, rolled oats, brown sugar, sliced almonds, and cinnamon. Mix well.
- Drizzle in the melted coconut oil, stirring until the mixture forms a chunky, crumbly texture.
- Sprinkle the streusel evenly over the bread mixture in both dishes.
Bake and Broil:
- Place the dishes in the preheated oven and bake for 25 minutes, or until the eggs are set.
- Switch the oven to the high broil setting. Drizzle a small amount of honey over the tops of the bakes and broil for 1 to 2 minutes, or until the topping is golden brown. Watch closely to prevent burning.
