Ingredients

  • 6 large eggs
  • 1/4 cup half-and-half
  • 1/2 tablespoon hot sauce
  • 1/4 cup green onions sliced
  • Salt and pepper to taste
  • 1/2 tablespoon avocado oil
  • 1 cup cooked ham diced
  • 1/2 cup yellow onion diced
  • 2 cloves garlic minced
  • 1 1/2 cups fresh baby spinach chopped
  • 1 9-inch pie crust unbaked
  • 1/2 cup white sharp cheddar cheese shredded

Instructions

  • Preheat oven to 400°F.
  • In a large mixing bowl, whisk together eggs, half-and-half, hot sauce, green onions, salt, and pepper until well combined. Set aside.

  • Heat avocado oil in a large skillet over medium-high heat. Add diced ham and cook for 2-3 minutes until slightly browned.
  • Add the diced yellow onion and minced garlic to the skillet, sautéing for 3-5 minutes, until the onion is translucent.
  • Stir in the chopped baby spinach and cook for about 1 minute until wilted, then remove the skillet from heat.

  • Transfer the ham and spinach mixture to the pie crust, and sprinkle the shredded sharp cheddar cheese on top.

  • Pour the egg mixture evenly over the quiche, ensuring the green onions are spread out. Bake in the preheated oven for 20-25 minutes, until the crust is golden and the egg is set.
