- 6 large eggs
- 1/4 cup half-and-half
- 1/2 tablespoon hot sauce
- 1/4 cup green onions sliced
- Salt and pepper to taste
- 1/2 tablespoon avocado oil
- 1 cup cooked ham diced
- 1/2 cup yellow onion diced
- 2 cloves garlic minced
- 1 1/2 cups fresh baby spinach chopped
- 1 9-inch pie crust unbaked
- 1/2 cup white sharp cheddar cheese shredded
Instructions
- Preheat oven to 400°F.
- In a large mixing bowl, whisk together eggs, half-and-half, hot sauce, green onions, salt, and pepper until well combined. Set aside.

- Heat avocado oil in a large skillet over medium-high heat. Add diced ham and cook for 2-3 minutes until slightly browned.
- Add the diced yellow onion and minced garlic to the skillet, sautéing for 3-5 minutes, until the onion is translucent.
- Stir in the chopped baby spinach and cook for about 1 minute until wilted, then remove the skillet from heat.

- Transfer the ham and spinach mixture to the pie crust, and sprinkle the shredded sharp cheddar cheese on top.

- Pour the egg mixture evenly over the quiche, ensuring the green onions are spread out. Bake in the preheated oven for 20-25 minutes, until the crust is golden and the egg is set.

- Remove from oven and let quiche cool for 10 minutes. Slice and serve while warm.
