Grilled Eggplant

Ingredients

  • 2 medium eggplants sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  • Preheat the grill to medium-high heat.
  • Brush both sides of the eggplant slices with olive oil and season with salt, pepper, thyme, and oregano.

  • Place the eggplant slices on the grill. Grill each side for about 5 minutes or until the eggplant is tender and has grill marks.
