Greek Fava (Split Pea Dip)

Ingredients

  • 1 cup yellow split peas rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups water
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt to taste
  • Black pepper to taste
  • Chopped onions, capers, olive oil drizzle optional, as garnish

Instructions

  • Combine split peas, onion, garlic, and water in a large pot. Bring to a boil, then reduce heat to simmer.

  • Simmer for about 45 minutes, or until the split peas are very soft and the mixture has thickened.

  • Remove from heat. Blend the mixture with an immersion blender until smooth. Stir in olive oil and lemon juice. Season with salt and pepper to taste.

  • Serve warm or at room temperature, garnished with chopped fresh onions, capers and a drizzle of olive oil, if desired.
