Ingredients
For the Crust:
- 1 1/2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 1/4 teaspoons baking powder
- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg room temperature
- 3/4 teaspoon vanilla extract
For the Frosting:
- 8 ounces cream cheese softened
- 1/4 cup unsalted butter softened
- 1 1/3 cups powdered sugar
For the Toppings:
- 3 cups assorted fresh fruit such as strawberries, blueberries, kiwi, and grapes
- 1/2 cup orange marmalade
- 1 1/2 tablespoons water
Instructions
- Preheat your oven to 350°F. In a medium bowl, whisk together the flour, cornstarch, and baking powder.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed until light and creamy, about 2 minutes. Add the egg and vanilla extract and beat until well combined.

- Slowly combine the dry ingredients with the butter mixture until they're just mixed. Wrap the dough and refrigerate it for 1 hour. Then let it rest at room temperature for approximately 15 minutes.

- Evenly press the dough into a lightly greased 12-inch pizza pan to create a circle approximately 1/3-inch thick. Bake for around 18 minutes, or until the edges turn a light golden brown. Once baked, remove it from the oven and allow it to cool completely on a wire rack.

- In a medium bowl, beat the cream cheese and softened butter until smooth. Gradually add the powdered sugar and beat until the frosting is light and creamy.

- Spread the cream cheese frosting over the cooled crust, and arrange fresh fruit on top.

- Mix the orange marmalade and water together. If needed, microwave the mixture until it is looser and spreadable.
- Use a pastry brush to glaze the fruit with the orange marmalade mixture. Chill the assembled fruit pizza in the refrigerator for at least 1 hour before serving to let the flavors meld. Slice and enjoy.
