- 8 large eggs
- 1 cup cottage cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup fresh spinach chopped
- 2/3 cup red bell pepper diced
Instructions
- Heat oven to 350°F and prepare a 12-cup muffin tin with liners or a light layer of cooking spray.

- Blend the eggs, cottage cheese, garlic powder, salt, and black pepper in a blender until the mixture is smooth.

- Transfer the blended mixture to a bowl. Mix in the chopped spinach and diced red bell pepper until well integrated.

- Distribute the egg mixture evenly into the muffin cups, filling each to approximately two-thirds capacity to leave space for rising.

- Bake in the preheated oven for 20-25 minutes or until the egg bites are set. Allow them to cool for a few minutes before removing from the tin.
