Ingredients

  • 3 tablespoons olive oil
  • 1 large onion thinly sliced
  • 1 tablespoon garlic minced
  • 1/2 teaspoon smoked paprika
  • Sea salt to taste
  • 1 1/4 cups plain 2% Greek yogurt
  • 1/2 cup reduced-fat cream cheese softened at room temperature
  • Black pepper to taste

Instructions

  • Heat the olive oil in a large nonstick pan on medium heat. Add in the sliced onions and cook, stirring well to coat the onions in oil.
  • Cook until the onions are soft and deep golden brown, stirring occasionally, about 25 minutes. The trick is to let them sit long enough to brown, but not too long so that they burn. You may need to reduce the heat as they cook.
  • Once the onions are golden, stir in the garlic, smoked paprika, and a pinch of salt. Reduce the heat if needed and cook for an additional 5 minutes or so, or until the  garlic begins to soften.
  • Place the onions in a large bowl and roughly chop them. Add in the remaining ingredients and stir until well combined. Season to taste with salt and pepper.
  • DEVOUR immediately!
