Ingredients
- 1/2 cup rolled (old-fashioned) oats (gluten-free, if needed)
- 1/2 cup strong-brewed coffee
- 1/3 cup non-fat vanilla Greek yogurt (plant-based, if desired)
- 1/2 teaspoon vanilla extract
- Sweetener of choice to taste (I used stevia)
Instructions
- Mix all ingredients in a medium bowl, sweetening to taste.

- Let the mixture sit in the refrigerator for at least 6 hours or overnight.

- Plate and serve the next morning with toppings of choice.
