Ingredients

  • 4 tablespoons red wine vinegar
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons granulated sugar
  • 1 garlic clove minced
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1/2 cup extra-virgin olive oil
  • 1 to 3 tablespoons fresh lemon juice
  • Water as needed

Instructions

  • In a blender, combine red wine vinegar, Dijon mustard, sugar, minced garlic, salt, and black pepper.

  • With the blender running, slowly drizzle in the olive oil until the dressing is well-emulsified and smooth. Add lemon juice, starting with 1 tablespoon, and adding more to taste.
