Ingredients
- 6 cups romaine lettuce chopped
- 1 1/2 cups cherry tomatoes halved
- 1 cucumber diced
- 1/2 red onion finely chopped
- 1 cup chickpeas rinsed and drained
- 1/4 cup kalamata olives sliced
- 5 tablespoons feta cheese crumbled
- 4 tablespoons extra virgin olive oil
- 2 1/2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 to 2 teaspoons honey optional
Instructions
- In a large salad bowl, combine the chopped vegetables with chickpeas, olives, and 4 tablespoons crumbled feta cheese.

- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper. Add honey if using.

- Pour the dressing over the salad ingredients and toss well to coat evenly. Sprinkle remaining 1 tablespoon feta cheese on top as garnish.
