Ingredients

  • 6 cups romaine lettuce chopped
  • 1 1/2 cups cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1 cup chickpeas rinsed and drained
  • 1/4 cup kalamata olives sliced
  • 5 tablespoons feta cheese crumbled
  • 4 tablespoons extra virgin olive oil
  • 2 1/2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 to 2 teaspoons honey optional

Instructions

  • In a large salad bowl, combine the chopped vegetables with chickpeas, olives, and 4 tablespoons crumbled feta cheese.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper. Add honey if using.
  • Pour the dressing over the salad ingredients and toss well to coat evenly. Sprinkle remaining 1 tablespoon feta cheese on top as garnish.
