Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion thinly sliced
  • 1/2 head of cauliflower cut into bite-sized florets
  • 16 ounces mushrooms such as cremini or button, cleaned and quartered

  • 1/2 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup vegetable broth
  • 3 cloves garlic minced
  • Red pepper flakes to taste, optional
  • Fresh parsley chopped, for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced onion and cook for about 5 minutes until softened.
