Ingredients
- 1 large cauliflower cut into florets
- 2 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 1 cup whole milk
- 1 cup heavy cream
- 1 teaspoon mustard powder
- 1/4 teaspoon nutmeg freshly grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup sharp cheddar cheese grated
- 1/2 cup Gruyère cheese grated
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
- Place cauliflower florets in a large pot of boiling salted water. Cook for 5-7 minutes until just tender. Drain well.

- In a saucepan, melt butter over medium heat. Stir in flour to form a paste and cook for 1 minute. Gradually whisk in milk and cream, and bring to a simmer. Cook until the sauce thickens.

- Remove sauce from heat. Stir in mustard powder, nutmeg, salt, pepper, and cheeses until smooth.
- Arrange the drained cauliflower in the prepared baking dish. Pour the cheese sauce evenly over the top.

- Bake in the preheated oven for 20-25 minutes until the top is golden and bubbly.
