- 1 pound carrots peeled and grated
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1/4 teaspoon salt
- 2 tablespoons chopped fresh parsley

Instructions
- In a large bowl, combine grated carrots and fresh parsley.
- In a small bowl, whisk together lemon juice, honey, olive oil, and salt until well blended.
