Ingredients

  • 1 pound carrots peeled and grated

  • 2 tablespoons chopped fresh parsley

Instructions

  • In a large bowl, combine grated carrots and fresh parsley.
  • In a small bowl, whisk together lemon juice, honey, olive oil, and salt until well blended.
