Ingredients

  • 1 tablespoon vegetable oil
  • 2 pounds beef stew meat cut into 1-inch cubes
  • 1 large onion diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • ¼ cup all-purpose flour
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • ¼ cup fresh cilantro chopped

Instructions

  • Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides.

  • Remove the beef and add the onion, bell pepper, and garlic. Sauté until the onions are translucent.

  • Return the beef to the pot. Stir in cumin, chili powder, black pepper, and salt.

  • Sprinkle flour over the meat and vegetables, stirring well to coat. Add beef broth and tomato paste, mixing well.

  • Bring to a boil, then reduce heat, cover, and simmer for 1 hour and 30 minutes, or until the meat is fork-tender. Serve and garnish with cilantro.
