Ingredients
- 1 tablespoon vegetable oil
- 2 pounds beef stew meat cut into 1-inch cubes
- 1 large onion diced
- 1 green bell pepper diced
- 3 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- ¼ cup all-purpose flour
- 2 cups beef broth
- 2 tablespoons tomato paste
- ¼ cup fresh cilantro chopped
Instructions
- Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides.

- Remove the beef and add the onion, bell pepper, and garlic. Sauté until the onions are translucent.

- Return the beef to the pot. Stir in cumin, chili powder, black pepper, and salt.

- Sprinkle flour over the meat and vegetables, stirring well to coat. Add beef broth and tomato paste, mixing well.

- Bring to a boil, then reduce heat, cover, and simmer for 1 hour and 30 minutes, or until the meat is fork-tender. Serve and garnish with cilantro.
