Ingredients

  • 1 tablespoon olive oil
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • 8 large eggs
  • Salt and pepper to taste
  • 4 large flour tortillas
  • ½ cup black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • ½ cup chopped fresh spinach
  • Salsa or hot sauce optional, for garnish

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the bell peppers and onions, and sauté until softened, about 3-4 minutes.
  • In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the vegetables and scramble until just set.
