Ingredients
- 1 cup steel-cut oatmeal
- 1 bottle Bai Brasilia Blueberry or use 9 ounces of water mixed with 9 ounces of blueberry juice
- 3/4 cup light coconut milk divided
- 1 cup frozen blueberries plus additional to serve if desired
- 2 tablespoons light agave or to taste
- 1/2 tablespoon raw vanilla extract
- Coconut flakes for topping
Instructions
- Rub a 5-quart slow cooker with coconut oil or cooking spray generously.
- Place the oatmeal, Bai drink, 1/4 cup of the coconut milk, and frozen blueberries into the slow cooker and stir until evenly mixed.
- Cover the slow cooker and cook until the liquid is absorbed and the oats are creamy, approximately 8 hours. If any liquid pools on the top of the oatmeal, you can just stir it back in.
- Stir in the remaining 1/2 cup coconut milk, agave, and vanilla extract.
- Top with additional blueberries and coconut flakes.
- Serve and enjoy!
