Baked Potato Bar

Ingredients

  • 4 Potatoes russet, sweet, or white
  • 2 tablespoon Cooking oil
  • Salt & pepper
  • 4 tablespoon Salted butter
  • 1 cup Sour cream
  • 1 cup Cheddar cheese
  • 1/2 cup Feta cheese
  • 1/4 cup Fresh chives
  • 1 cup Sliced mushrooms
  • 6 slices Bacon
  • 1 cup Cherry tomatoes
  • 1 Avocado
  • 1 cup Chili

Instructions

  • Preheat your oven to 400 degrees Fahrenheit. Wash the potatoes thoroughly and pat them dry.
  • Pierce the potatoes with a fork several times. This allows steam to escape during baking.
  • Rub the potatoes with cooking oil, then season generously with salt and pepper.
  • Place the potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.

  • While the potatoes are baking, prepare your toppings: slice the butter, grate the cheese, chop the chives, sauté the mushrooms, cook and crumble the bacon, halve the tomatoes, slice the avocado, and heat the chili.

  • Once the potatoes are done, let them cool for a few minutes, then slice them open and fluff the insides with a fork.
