Ingredients
- 1 1/2 pounds boneless skinless chicken breasts cut into 1-inch cubes
- Kosher salt to taste
- Black pepper to taste
- 2/3 cup brown sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 1/2 tablespoons chili powder
- 1 pound bacon slices cut into thirds
- Freshly chopped parsley for garnish optional
Instructions
- Preheat oven to 350°F. Line a baking sheet with foil and place a wire rack on top. Lightly coat the rack with nonstick cooking spray.
- In a bowl, toss chicken cubes with salt and black pepper.

- In a separate bowl, mix brown sugar, garlic powder, onion powder, and chili powder. Cut bacon slices into thirds.

- Wrap each chicken cube with a piece of bacon, secure with a toothpick, and dredge in the brown sugar mixture. Arrange on the prepared rack.

- Bake for 25-35 minutes or until bacon is crisp and chicken is cooked through. If using, sprinkle with parsley before serving.
