Ingredients

  • 3 medium zucchini
  • 1 garlic clove minced
  • 1/4 cup fresh basil chopped
  • 1/4 cup pine nuts toasted
  • 4 tablespoons extra virgin olive oil
  • 2-3 tablespoons lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup Parmesan cheese shaved (optional)

Instructions

  • Using a mandoline or vegetable peeler, slice the zucchini into thin ribbons or slices.

  • In a large bowl, combine zucchini, garlic, chopped basil, and toasted pine nuts.
