Ingredients
- 1 English cucumber
- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 to 2 tablespoons low-sodium soy sauce
- 1 1/2 teaspoons sesame oil
- 1 teaspoon rice vinegar
- 1 clove garlic minced
- 2 tablespoons green onions chopped
- 2 teaspoons sesame seeds
- Salt and pepper to taste
Instructions
- Using a mandoline or a sharp knife, thinly slice the English cucumber.

- In a bowl, whisk together Greek yogurt, lemon juice, 1 tablespoon soy sauce, sesame oil, rice vinegar, and minced garlic. Adjust soy sauce as needed.

- In a mixing bowl, combine sliced cucumbers and dressing. Toss well to coat. Sprinkle with chopped green onions, sesame seeds, and season with salt and pepper to taste. Serve immediately or chill to enhance flavors.
