Ingredients
- 1 cup peanut butter
- 3/4 cup granulated Truvia
- 1/2 teaspoon salt
- 1 egg
Instructions
- Preheat your oven to 350°F and line a cookie sheet with parchment paper.

- In a large bowl, beat together the peanut butter, Truvia, and salt with an electric hand mixer.

- Add in the egg and beat until the mixture thickens up and forms a dough. It's okay if it seems a little wet!

- Use a tablespoon measure to portion out a heaping tablespoon of dough per cookie, and place each one an inch apart on the parchment paper. Use a fork to press out the dough to about 1/3 inch thick, and make a cross-hatch pattern on the surface.

- Bake in the oven until set, about 16 to 18 minutes. They will feel soft at first, but will firm up as they cool.

- Let cookies cool on the pan completely for crunchier cookies or for about 10 minutes for softer cookies, and then transfer them to a cooling rack to cool completely.
