A crisp green spring salad with asparagus, peas, avocado, radishes, and almonds.

Ingredients

  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 2/3 cup green peas fresh or frozen and thawed
  • 4 cups mixed salad greens
  • 2 radishes thinly sliced
  • 1 avocado diced
  • 1/3 cup lemon vinaigrette
  • Salt to taste
  • Black pepper to taste
  • Fresh mint leaves for garnish
  • 1/3 cup almonds toasted and chopped

Instructions

  • Bring a pot of salted water to a boil. Add asparagus and blanch for 2 minutes. Transfer asparagus to a bowl of ice water to stop cooking. Drain and set aside.

  • In a large salad bowl, combine blanched asparagus, peas, mixed salad greens, sliced radishes, and diced avocado. Toss with lemon vinaigrette.
