Ingredients

  • 1 pound dried Great Northern beans rinsed
  • 1 large ham bone or ham hock
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste

Instructions

  • Place the rinsed beans, ham bone, carrots, celery, onion, and garlic into the slow cooker.

  • Pour the chicken broth over the ingredients. Add the bay leaf and thyme. Season with salt and pepper.

  • Cover and cook on low for 8 hours or until the beans are tender. Remove the ham bone, shred any remaining meat, and return the meat to the soup. Discard the bay leaf before serving.
